Maturation:
Soft press of grapes, natural fermentation at controlled temperatures. Boiling of autoclave foam at controlled temperature of 16° C; When a pressure of 4.5 bar is reached, the temperature decreases rapidly. After an adequate period of ripening on yeasts, the sparkling wine is centrifuged and filtered for bottling.
